Guests are seated, not processed. Twenty-eight covers, two sittings at dinner, one at lunch. Tables are 90 centimetres from one another. The banquettes are sea-black wool; the stone is Trigu limestone that will stain if you drip oil on it, which we will not pretend is a tragedy.
Sound is managed with linen, not with playlist volume. If you need a quieter corner, say so when you reserve — the last two tables on the window take the street, the inner four do not.
